I have been away for WAY TOO LONG!
Things have been super busy though.
I participated in my first big craft show - Valley Merry Christmas. It was somewhat of a success. Your first one, you never know what to expect. If I do it next year I will know not to make so much!
My shop on etsy has been super busy this season. And I'm very thankful for that. I just need to find a way to keep caught up on my shipping.
If you have any suggestions for new jam ideas - let me know!

Mojito Chicken for Dinner
Last night for dinner I decided to make mojito chicken with my mojito jelly. I had 3 large chicken breasts and used a 1/2 pint of the mojito jelly - this was a little overkill but I used it all anyways. I could have easily done 5-6 chicken breasts if not more with the 1/2 pint.
I turned them a couple of times and kept them in the jelly (which was a little runny) for probably 2 hours. I then put them on a medium/high heat grill. The outside of the chicken had this nice crusty sweet taste and the inside was nice and juicy.
I served this roasted onions and brussel sprouts - also done on the grill, and a side of rice.
I of course made enough for left overs and can't wait to eat it for lunch today.

Made a great batch of Hot Pepper Butter tonight. The house still smells "hot" from it. I brought some to a party last night as a dipper for pigs in a blanket. It was a big hit. We also had hot ham & cheese sandwiches that I spread it on. Gave it that hot and sweet taste that it was missing.
